We created this custom box of Coffee chocolates using Spotted Fawn Coffee Roasters Colombian coffee.  This coffee is gorgeous!  So, where is it from:

Colombia Excelso EP

Region: Various Regions

Growing Altitude: 1300-1600 MASL

Variety: Caturra, Typica, Bourbon

Process: Washed

Cupping Notes: Brown Sugar, Cocoa+Fig

This coffee is sweet, with subtle notes of citrus. They roasted on the lighter side of medium, releasing notes of brown sugar and fig. It has a bright acidity and minimal after-taste.  

Here's what we loved about working with it - from chocolate to chocolate it was simply outstanding in how it came through in each type - and then of course we took it up a notch.  The dark chocolate is our Signature blend of dark chocolate plus the coffee and we added an extra on top - some Maldon Flake salt from Evoolution.ca  Then, of course a mix into the caramelized chocolate with crunchy chocolate covered biscuits on top - winner!  But, then we had to do a blended baton bar - both the dark chocolate and the caramelized chocolate together with the coffee and a hint of salt - total magic!
